Lemon Squares
Crust
2 cups flour
1/2 cup confectioner's sugar
1 cup margarine
Let margarine soften then mix all three ingredients together and press the crumbly mix into a 9x13 pan. Bake at 350 for 20-25 minutes.
Batter
4 eggs
2 cups granulated sugar
1/3 cup lemon juice
1/4 cup flour
1/2 tsp baking powder
Beat eggs slightly, then add other ingredients. Mix well and pour over crust (cooled for a few minutes). Bake at 350 for 20-25 minutes.
Let cool, then sprinkle with confectioner's sugar and cut into bars.
I promise...I won't do another desert next week!!

i must admit that i don't like lemon squares, but this recipe does look very easy :)
