To me, the holidays mean minty foods. Am I alone here? I found this recipe in the Holiday 2009 Hershey's Cook Book and it's absolutely delicious.
Perfectly Peppermint Brownies
3/4 cup Hershey's cocoa
1/2 teaspoon baking soda
2/3 cups butter margarine, melted and divided
1/2 cup boiling water
2 cups sugar
2 eggs
1 1/3 cups all purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
16-18 mini York peppermint patties, unwrapped (duh) and chopped
Stir cocoa and baking soda together in a large bowl. Stir in 1/3 cup of butter, then add boiling water; stir until mixture thickens. Add in sugar, eggs and remaining 1/3 cup of butter; stir until smooth. Add in flour, vanilla and salt; blend well. Mix in York pieces.
Bake at 350 for 35-40 minutes in a greased 13x9 pan. Cool completely and cut into pieces.

i wish i could eat peppermint anything year round. i mean, i guess i could, but it kind of makes christmas fabulous. i'm adding this to my "things i hope to cook one day but it will likely take 2 years to get there". thanks for the recipe!
