Tuesdays At The Table - Kicked Up Meatballs

Happy Tuesday, Ladies!  I just realized that next week is Thanksgiving.  Already?!  Really?

Next week I'll come prepared with a Thanksgiving appropriate side-dish.  This week I'm bringing my kicked-up meatballs.

Kicked Up Meatballs

1 1/2 lbs ground beef (10-15% fat)
1 lb ground sausage (without casings)
2 eggs
1/3 cup panko breadcrumbs
1/2 cup grated Parmesan & Romano
1/2 teaspoon dried basil (or a handful of finely chopped fresh)
Pinch of oregano
Salt
Pepper

In a small bowl, whisk eggs.  In a large bowl, combine all ingredients together and combine well.  Let sit for a half hour or so for breadcrumbs to absorb moisture.

Roll into golf ball sized meatballs and place on a tinfoil lined baking sheet.  Bake at 350 for 20-25 minutes.

I served these yesterday for a family dinner with angel hair, Caesar salad and garlic bread - YUM!

  9. The meatballs sound good. My husband makes incredibly good homemade meatballs but he only uses ground beef. I'll have to suggest adding some sausage in next time and try it.
