First, a huge THANK YOU to all of you that have sent Meadow your thoughts and prayers for a speedy recovery! Your comments and good thoughts have meant so much to me. I'll do an update post on her tomorrow (hopefully).
I'm all about the bar cookie lately. Most of the bar cookie recipes mix up quickly, clean up fairly easily and are just plain yummy. :-)
Strawberry Lemon Bars
2 1/4 cups flour
1/2 teaspoon baking
powder
1/2 teaspoon salt
3/4 cup
sugar
3 tablespoons lemon zest
1 cup butter, room temperature
1 tablespoon lemon juice
1 egg
1/2 cup diced fresh strawberries
In a medium bowl sift together flour, baking powder and
salt. Set aside.
In the bowl of your electric mixer cream sugar and
butter together. Mix in egg, lemon juice and
zest. Slowly add in flour mixture. Fold in diced
strawberries by hand.
Line an 8 x 8 baking dish with
foil. Press dough into the bottom of the
pan. Bake at 350 for about 35-45 minutes or until a toothpick is
inserted and comes out clean.
Let the bars cool before
cutting and glazing.
Glaze
1 cup of confectioners sugar and the juice of half a
lemon. Whisk together and pour over cut and cooled bars.
What's cooking in your kitchen?

Hi Cole,
ReplyDeleteYour Strawberry Lemon Bars look awesome. Hope there is a speedy recovery for Meadow. Hope you have a good week and thanks for hosting.
Miz Helen
So sorry to hear about Meadow! My little Tuck is also recovering. Turns out he is a little garbage disposal. The stuff I thought he was just tearing apart (and I would take away the pieces/stuffing/etc) he was actually ingesting parts of it and the stuff got lodged in his intestine. He had emergency surgery 12 days ago. He is doing great and I have thrown away everything with stuffing and watch him like a hawk!!! It was so scary!
ReplyDeletePoor Meadow!
ReplyDeleteThank you for hosting. Your strawberry lemonade bars are so summery!
I'm sorry about your dog. It's hard when they are sick because they are so much like family. Ours had a similar problem a year ago but since he is a different breed they had a hard time diagnosing him. He didn't look good and we thought we'd lose him. I'm embarrassed to say I cried in front of the vet. He's ok now though. Once we got him to lie still so he could heal. Ornery as ever.
ReplyDeleteThanks for hosting! I'm a fan of lemon bars, and I'm sure adding strawberries makes them tastier eats. Hope Meadow feels better soon!
